A variety with a tapered and pearly grain, Carnaroli needs no introduction: it is universally considered the king of Italian rices, and rightly so. His super power? This extraordinary historical variety is unsurpassed for its cooking and absorption properties, while its core rich in starch allows you to make amalgamated and creamy risottos while maintaining a perfect consistency, with shelled grains and wonderfully al dente. The Carnaroli cultivated by Alice of Cascina Oschiena boasts the wording Classico: its seeds are certified and are grown in a protected biodiversity environment.

In the centuries-old family farmhouse, since 2008 Alice has been at the helm of a project that aims to enhance and safeguard the area in which she operates, all while cultivating and producing spectacular rice, some with exotic references such as Venere Integrale, and others with names better known, but with something extra: the Carnaroli and the Arborio of Cascina Oschiena boast the Classic appellation, a wording reserved only for some historical Italian rice varieties and which guarantees that the rice contained inside the package is 100% of the declared variety. Yes, not all the vaunted Carnaroli and Arborio really are! Cascina Oschiena is a brilliant example of how producing food of the highest quality and doing it sustainably are two sides of the same coin. Laughter is the point of arrival, but Alice's overall vision was decidedly broader. His idea of ​​avant-garde rice cultivation has been harmoniously declined inside the original architecture of the farmhouse. An efficient space, where you can breathe the history of the place, where waste has been reduced to the bone and where people actively work with and for the environment. Any numbers? In the last twelve years, over 5,000 plants have been planted, and more than 25 hectares of rice fields (a quarter of the company's area) have been converted into a natural oasis, protecting biodiversity and repopulating it with its fauna. As happened with the Royal Godwit, a rare traveling bird that has resumed nesting in the rice fields, which has become an unusual mascot and company logo in its own right. A good rice is much more than a rice that keeps cooking, it is also and above all this.
