For Casa Matilda in Dogliani, preserving fruits and vegetables grown in the company's gardens and orchards is a serious matter. Fruits are always harvested and transformed only when they reach the perfect ripeness degree, thus allowing adding just a really small quantity of cane sugar and fresh lemon juice to balance. To the vegetables, only extra virgin olive oil of exceptional quality, unrefined salt refined, their own artisanal vinegar and aromatic herbs from the same garden are added. Pasteurization takes place at a very low temperature over indirect heat, so that the original colors and scents of fresh fruit and vegetables are preserved.
