The fruit is always harvested and processed at the perfect degree of ripeness, allowing for the addition of only a minimal percentage of cane sugar and fresh lemon juice to balance it, while for the vegetables, only extra virgin olive oil of exceptional quality, unrefined salt refined, Langa wine vinegar and aromatic herbs from the same garden. Pasteurization takes place at a very low temperature over indirect heat, allowing the original colors and aromas of fresh fruit and vegetables to be preserved.
