From the blueberries grown when Fabio and Anna bought the Casa Matilda farmhouse, an intense blueberry compote with a wonderfully spreadable consistency. Harvested at the peak of maturity, Casa Matilda's blueberries are grown on a natural basis and are full of taste and aroma. This compote is the version closest to the natural form of blueberries: the percentage of added sugar is almost imperceptible on the palate and thanks to the very low temperature pasteurization all the aromas and hints of fresh fruit are preserved intact. Arm yourself with bread and butter, crossaint, baste pies and roll up your sleeves for the next cheesecakes: it will be a triumph.

For Casa Matilda in Dogliani, preserving the fruit and vegetables grown in the company's gardens and orchards is a serious matter. Inside each jar, only raw materials of impeccable quality raised with dedication in the fields (and without the help of pesticides and herbicides) and selected with craftsmanship. The recipes are those of the Piedmontese tradition handed down from past generations and each of the compotes, mustards, appetizers and creams faithfully carries the taste of the main ingredient, which is never alternated with the use of thickeners, preservatives, additives, aromas or artificial colors. . The fruit is always harvested and transformed to the perfect degree of ripeness, allowing to add only a minimum percentage of cane sugar and fresh lemon juice to balance, while for the vegetables, only extra virgin olive oil of exceptional quality, unrefined salt refined, Langa wine vinegar and aromatic herbs from the same garden. Pasteurization takes place at a very low temperature over indirect heat, allowing to preserve the original colors and scents of fresh fruit and vegetables. Those of Casa Matilda are small glass masterpieces, bijoux that bring all the genuineness of the Piedmontese countryside.
