How-to:
Put the water on, bite into a bruschetta with diced aubergines, uncorking the Langhe Nebbiolo 2018. That bite is delicious and we give you an encore. Pour the wine and dedicate yourself to perfuming the kitchen with the Mediterranean notes of the tomato sauce that you reduce in the pan. Salt the water and, when it is boiling, throw the paccheri into it. You have about 10 minutes to tease with the Piedmontese appetizer, as per tradition. At the table, enjoy the epiphany of an essential and spectacular first course, in which the pasta tastes like wheat and the sauce tastes like tomato. You won't need anything else. The savory side goes out with the cheeses accompanied by red onion compote and curry pear mustard. Then... lights focused on the dessert. There's still room, right? Dulcis in fundo, a corn paste from Pignolet, a corn with a round and nutty taste.
