The world of wine vinegar, the real one, made slowly and carefully, is wonderful and surprising. And yet, it is a world that is often misunderstood, mistreated, debased because it is considered the disastrous result of the wrong wine, gone bad. Conventional vinegar is often this: a hastily created, rude product that can only be used in the kitchen to clean it, at best. However, a vinegar made from grapes, even before making it from wine, is a completely different story. Casa Matilda 's Asì vinegars are produced using grapes of impeccable quality, often of their own production, and the wine obtained is acetified using the Orleans artisan method, a technique that requires great care and patience.
