With the opening of Braja to the public, many new features also arrived. The Sorì Spritz made its first release at our Grand Opening and we haven't abandoned it since!
Together with the Artichokes of Sorì Presidio SLOW FOOD, Stefano (aka Duipuvrun) also brought us theSorì: an artichoke liqueur produced in collaboration with Chinati Vergano. A very delicate maceration extract that immediately made me want to create a Spritz my way.

Almost at the same time, a new producer from our Roero arrived from Braja, Marchisio, who won me over with his "Faiv"Brut Blanc de Blanc Classic Method 100% Arneis. A bubble made with a native Piedmontese variety was just what I had been looking for for a long time and this, after 11 years on the lees, you can only imagine it .... Or come and try it here at Braja!
- 1/4 Sorì
- 3/4 Faiv Brut Blanc de Blanc
- 1 sprig of rosemary
- 1 slice of lemon
- plenty of ice
To prepare theSorìspritzer, Start by pouring the ice into a wine glass, then add the "Faiv" and then the Sorì. Finally, add a slice of lemon and a sprig of rosemary after rubbing it around the mouth of the glass.
